Vancouver foodies have long flocked to Vij's for signature dishes such as these, undeterred by the restaurant's no-reservations policy, which stands testament to the culinary prowess of Vikram Vij and Meeru Dhalwala, the power couple behind this gourmet destination for sophisticated, inspired and just plain delicious Indian food.
We recently had a chance to visit the celebrated chefs and restaurateurs in their beautiful Vancouver home. It was a great experience to witness the incredible chemistry and energy shared by the dynamic duo, who are so down-to-earth, friendly and eloquent—especially when it comes to the cherished subjects of food and family.
Here are the highlights from our visit. In their home kitchen, Vij and Dhalwala talk about everything from culinary inspirations, the deal with butter chicken, to why they would never cook together. And we also took a peek inside their fridge. I mean, we just had to!
